For those that like prime rib

Post by BigSky56 »

Did some ultrasound testing on the ranch's yearling bulls and heifers last week checking for ribeye size and marbling, tech said they were grading prime and big ribeyes now will have to check bulls for fertility and ship this april sometime. danny

A bit more rare than I prefer.

Interesting to know that you can ultra sound them to find out what you will end up with. But, it works with women so guess it makes sense that it works with cows too.

Mmmm mmm good!

I love going down to Saylors Steak House in Portland Oregon for a big thick prime rib. I always order a 24 or 30 ouncer medium rare:D

We used to have our hogs loin eye measured with ultrasound to see which boar and/or sow to keep. We ended up with some incredibly muscled hogs.

Wow, I never knew that could be done on the hoof ! :o

I always though the grading was after-the-fact of butchering. . 8)

+1

I'm assuming that tool allows you to adjust diet, etc. to improve grading before sale?

Even ranchers are going high tech. But, it's almost like butchering the thing on the hoof, what with deciding how big the rib eye are.

Yeah it gives you a idea of how the feed is working for marbling and how much cover fat,the fat on top the meat, by adjusting the ratio of corn oats and barley you can help the marbling and cover fat.The sounding will also give you the size & length of the ribeye. One bull gained 4.9 lbs a day no hormones just genes and high protein hay and good grain. The bulls will go out to commerical ranchs and improve the calves coming off grade cows. the heifers will go to seed stock producers in WA, ID & MT. Just for info most feed lots are happy if their feeder stock will gain 2.5 lbs per day and they put growth hormones in the animals. The high tech benifits seed stock producers which helps the commerical ranchs. danny

Wow, the ignorant are shown the way. It doesn't surprise me though. I love prime rib and rib steaks. They're the best in my opinion.
